The ultimate objectives of the BrOmics research project are to enable Belgomilk to make scientifically based adaptations and optimizations along the whole manufacturing process of Brugge Oud cheese in the first place, making the production of high-quality cheeses with uniform flavour possible, and secondly to uncover the full flavour potential of Brugge Oud cheese, which has to allow a major leap in quality improvement.
